We are looking to migrate our LBI from a Windows 2003 (32) to Windows 2008 (64) .... Has anyone done this? If so, any pointers on the process (if there is one)......Thanks Chris

Yeah... done it.
get it all installed (from scratch).... WAS, BouncyCastle, etc... I think we even pointed it to a new database...
get the data copied over (backup restore to the new schema)
Then here's the key.. use the hidden feature, and even less documented BrowseServices function. More info here:

Be careful when you copy the LawsonDocuments folder over to the new server... Try to make it the same path as on the old one. Just easier that way... you won't have too much to change if you keep all of your paths the same.

Note also that certain things may not work properly after the migration. For example, if you have existing historical publications in PDF format that contain drills, those drills will still point to the original URLs, and they cannot be changed, since those are stored inside the PDF files. In other words, if you need to re-point new LBI to a different LSF, the existing drills may still point to the "old" LSF.
Also if you used Tomcat before, and you're migrating to the WAS now, you may need to do an extra step, so LBI will "remember" it next time.
Note also that you will need to migrate (and possibly update) DSSO, and any other items (such as Landmark and LSO) that may point to LBI.
