We just migrated from Unix to Windows (2008 R2 on VM) and was wondering how often do you reboot you servers. Do you do it on a regular schedule or when things get slow? Coming from Unix, we rarely had to reboot, a lawson restart was all that was needed to keep it humming along.

No schedule reboot here. Things never get slow for me, i can't speak for others. I do reboot when there's upgrade (hardware/software), patches, or maintenance.

We have an boot script that is scheduled weekly to automatically reboot both the app and web servers.

Can't speak for the core Lawson server, as it's still on Unix and just runs... LBI, and MSCM though we have found that we need to reboot. LBI and MSCM were being rebooted monthly --- (we've had an issue with the RAS server(s) not coming back up, but that's for another discussion).
All of this was found on our own, and then when we talked to a Lawson installation tech that we know, were recommended to increase the frequency of the reboots if we noticed problems. We've since increased the LBI reboot to nightly, and the MSCM reboot to weekly.

From none to weekly to daily, now you know why I am asking the question. The LPS installer indicated we should do it weekly but I wasn't sure if he was being "old school" or there really are enough "leaks" in the system to warrant a weekly reboot.

The Lawson installer that we talked to put it this way: "Let's just be real honest here: Windows leaks, WAS leaks, Java leaks, LBI leaks, MSCM leaks... so reboot when you need to."
One of his larger clients reboots both MSCM and LBI daily.
