We are considering marking all fields in HR to store History. Is this something that could come back to bite us?

I don't think you'll want to include EVERY field, as you will pay a price for storage/performance. However, you will want to include most demographic fields (status, address, pay rate, etc. etc. ) if you want to do any history-based reporting (either with Crystal, etc. or with HR170).
