I have a flow that has several service variables associated. These variables are being passed to the inbasketexec however the variables are passing their initial values (set when the flow was triggered) rather than the current value as of the time the User Action is called.
Is there a way to update the value of a service variable so that it passes to an in basket, if not what other alternatives exist?

Updating the value in PFIWORKUNITVARIABLE did the trick.
