and I need to figure out what the Lawson Security server name is so I can login to the Security Administrator. Yes, the information is that hard to find. What "*.cfg" file can I look in to find the name to use on the login screen for the Security Administrator or RM Administrator?

Try whatever your lawson user is, such that you would use to log into LID or Portal...
Try using the same server as your portal is on. (Start with http:// and if it is on a nonstandard port then keep the port also, like
http://server:81
)

Look through $LAWDIR/system/install.cfg
Things like:
DNSNAME=
DEFAULT_RMID=lawson
etc

Got it resolved. Someone around here was assuming I "knew" the fully qualified name and was only giving the most significant node... :o/
