I would first look at your test product line. Hopefully a copy of prod data has been recently applied to test. Then you can just query all the fields you need and upload to prod. If that's not a practical solution you could query the ICAUDIT table for any itemloc records deleted on that day. That will at least give you all the items that were on the par. But you'll have to reconstruct all the par levels, UOMs, GL cats, source records, etc. But again you may be able to get that from your test system even if the copy isn't recent.

Sigh... test wasn't updated so I can't pull from there. I was able to run a query against ICAUDIT and at least get all the items but that doesn't help since I don't remember par levels and such. I spoke with IT and they think maybe they'll be able to get a backed up version of ITEMLOC. Here's hoping...
