I want to use the "Employee Dates" page from manager self service to display different fields...

Would it be difficult in design studio to create a page with number, name, process level, department, fte, status, cost center distributions....

Any thoughts ?

You can't use Design Studio to modify an ESS/MSS page.
You could, however, use a Design Studio Portal Page with DME objects to accomplish what you want.
