Hello,
What are the steps needed to design an uplod utility for activities instead of manually adding them in using AC10.1 ?

I assume you are looking for a mass load using something like Microsoft Add-ins.
The easiest way to create a file for upload might be to use the add-ins query to pull the fields, then map that data back into an upload template. You would catch all the key fields and just delete the ones you don't need.
