Hello-
I know that Lawson DB's require a collation setting of Latin1_General_Bin. But does it matter what the actual server setting is or can you take the default in the installation?

You can take the default, but will need to remember to change the collation every time you create a database.
People frequently forget to do that, which is why it's easier to change the default if the only databases on the db server are for Lawson.
